I am a huge fan of crackers. I love them with all sorts of toppings. Cheese is my favorite. But, I also like hummus, fish spread, roasted veggies, smoked salmon, etc. However, crackers sold in stores are full of crap. Let’s face it, they are. I know, they are soooo delicious. But, when you are on the path to remove all the processed foods out of your life like I am, crackers, my friend, gotta go.

  • Ingredients: 2 sticks butter, room temperature

    1 cup shredded motzarella cheese
    1 tsp ground black pepper
    1/4 tsp sea salt
    1/4 cup sundried tomatoes, finely chopped
    1/4 cup cilantro, finely chopped
    2 cloves garlic, minced
    1.5 cups whole wheat flour Bob's Red Mill is my flour of choice. However, to make this gluten free, use Bob's Red Mill All Purpose Flour.

  • Instructions:
  • Place butter, cheese, salt and pepper in a stand mixer. Mix on medium-high for about 5 minutes.

  • While your mixer is going, chop your add ins. Add to the mixer on the lowest setting.

  • Now add the flour one cup at a time until mixed completely.

  • Roll mixture into a log shape and place in the refrigerator for at least one hour to chill.

  • Once chilled, slice into 1/4 inch or thinner slices. Make sure your knife is VERY sharp or the slices will get smushed instead of sliced.

  • Bake in a preheated oven at 350 degrees F for 22-25 minutes. The crackers will be firm when done. Set aside to cool completely. Serve with the toppings of your choice. Will stay fresh for 3 days in a ziplock bag. Do not refrigerate.
