A fresh tomato salad served on crusty bread that soaks up all the juices. This makes a hearty snack, or a quick and easy summer lunch or light dinner. Omit the cheese or replace with a dairy-free substitute if necessary. 

  • Ingredients: 12 oz (340 g) heirloom cherry tomatoes
    8 oz (225 g) perlini mozzarella balls
    1 tsp balsamic vinegar
    2 tsp extra virgin olive oil (plus a little more for the bread)
    1 TBSP capers, drained
    a handful of parsley, chopped
    salt and pepper to taste
    gluten-free baguette or artisan bread
