Egg-free, dairy-free, nut-free - in fact, top 8 allergen-free!

  • Ingredients:

    4 bell peppers: 1 red, 1 green, 1 yellow, 1 orange
    2 cans of black beans, rinsed and drained
    1 red onion
    1 clove of garlic, minced
    1 can of corn, drained
    Cilantro, a handful, chopped to about 1–2 Tbsp
    1/4 cup olive oil
    1/4 cup + 1 Tbsp red wine vinegar
    1 fresh lime, squeezed, or a tablespoon of lime juice
    Tortilla chips, for serving

  • Instructions:

    Dice the peppers and onion.
    Mix in a large bowl with the beans, garlic, corn, and cilantro.
    Add the olive oil, vinegar, and lime juice.
    Let rest in the fridge for at least an hour, or just eat it all up because you can’t wait!
