Sweet & Sour Meatballs

A great addition to any picnic!

  • Ingredients: The Meatballs:
    1 c. Zemas Gluten-Free Multigrain Pancake & Waffle mix (full mix for doubling)
    1 lb. grass-fed ground beef
    2 eggs (or Zemas egg substitute*)
    ½ c. onion, finely chopped
    ½ c. milk of choice (see substitutions)
    1 t. black pepper
    1 t. gluten-free Worchester sauce

    The Sauce:
    ½ c. palm sugar
    ¼ c. apple cider vinegar
    1 T. gluten-free mustard
    ¼ c. gluten-free BBQ sauce
    1 t. gluten-free Worchester sauce

  • Instructions: Preheat oven to 350 degrees.  Combine all the meatball ingredients and mix well, careful not to over mix.  Lightly roll into 12-14 balls and place in a casserole dish.  In saucepan heat all the sauce ingredients for 2-3 minutes over medium, until the sugar dissolves.  Pour over meatballs and bake for 30 minutes.

    *Double for a large party
