Secretly Healthy Coconut Pumpkin Granola

When the leafs start changing colors, how do your taste buds adapt to fall? Do they crave warming stews and freshly baked pumpkin bread? Or is your smoothie bowl addiction so great, you don't mind wearing extra layers while eating? Whatever flavors you start craving in fall, this recipe for Secretly Healthy Coconut Pumpkin Granola probably checks the box. Besides including usual favorites like banana and summer squash, this granola also features pumpkin spice and purée and coconut flour (with thanks from Nuts.com).

Six Ingredient Sweet Potato Personal Pizza

What happens when a celiac is on the hunt for the best gluten free pizza recipe and has some leftover sweet potato in her fridge? She comes up with the sweet potato pizza crust recipe of her gluten free and vegan dreams, of course! This sweet potato pizza is packed with fiber and antioxidants from the sweet potato and chia seeds. Thanks to buckwheat flour, this gluten free pizza crust is also high in iron and offers some plant-based protein. The best part? The sweet potato pizza crust features only six ingredients (excluding water), making this one of the easiest personal pizza recipes out there!

Sweet Potato Salmon Sliders

Ever since the Earl of Sandwich slapped meat between two slices of bread to free his hands for gambling (true story!), sandwiches have ruled people's daily diet. When celiac popped into the picture, though, I found myself craving a different kind of Wonderbread than gluten free substitutes. That's when I saw a sweet potato staring at me from my desk. Just pause for a moment and imagine. Two fluffy sweet potato rounds with a juicy slab of salmon tucked in between, perfectly accented by a few leafs of spinach and a creamy slice of avocado. A rich, chewy, soft taste of heaven with every bite.

Gluten Free Chocolate Superfood Smoothie

We've all probably dreamed of it: a gluten free and vegan breakfast that's good for you but tastes like dessert. Thanks to this Chocolate Superfood Smoothie Bowl, though, that dream can actually become a reality. Just imagine: a rich, thick and creamy chocolate smoothie, paired with crunchy gluten free granola, juicy berries, creamy nut butter and a healthy chocolate magic shell for good measure. I won't say this tastes exactly like ice cream...but this vegan smoothie bowl is pretty darn close! And, even better? It's packed with hidden veggies and superfoods so you really can eat it for breakfast every day. (Like I actually have been doing, on-and-off, for over a year).

Chocolate Lava Mugcake

Soft, spongy cake. Oozing chocolate. With this mug cake in your palm, you can really hold the whole (edible) world in your hands. Now, even for a girl who has cut most sources of refined sugar out of her diet, sometimes the summer nights get cold, your stomach gets hungry, and all your taste buds want is a big slice of cake. Hello chocolate mug cake - creamy, gooey and just sweet enough to fulfill that chocolate craving! Plus, who doesn't love a dessert that can transform from ten simple ingredients into a luxurious cake in five minutes? To get started, gather your dessert armory! Like most of my recipes, this one is versatile, fits multiple diets (paleo, vegan, gluten free, low fodmap), and relatively healthy. So grab a mug, a spoon, and a microwave and get ready to dig in!

GF and Vegan Pizza with Pizzaz

Everyone has a different "love language" but one love most people have in common? Pizza of course - especially when that pizza is easy to make, free of most allergens and high in protein thanks to the buckwheat base. If that doesn't get your heart pitter-pattering, I also have three topping combos that might as well make homemade pizza your favorite date.
Unfortunately for this celiac, oats and my gluten-shredded intestines haven't gotten back on talking terms since my diagnosis. For a while, I was riding the quinoa flake train, but I abandoned those in a desperate jump to stop the unexplainable itching that hit me a few months ago. What's an oat-cravin' gal to do? Buy packs of Bob Mills' rice and buckwheat flakes and hope for the best! For a little while, I was dancing the Goldilocks. Just rice was too thin; buckwheat alone tasted a bit too nutty. And then my taste buds landed on the perfectly thick, chewy, no-oat oatmeal! Having a bowl of this magic to look forward to makes my early college class schedule a little easier to swallow (food pun, of course, intended).

Zucchini Bread Nana Ice Cream

What's that one meal that you can't live without? Loaded pizza on a gluten free crust? Your favorite chocolate cake with a molten center? For this celiac, it's homemade nana ice cream decorated with granola, berries and lots of chewy/crunchy goodness. Don't know what nana ice cream is? (If so, you definitely aren't following me on Instagram and haven't seen Margie's amazing blog, Nana Ice Cream.) Basically, it's a dairy free "ice cream" created by blending frozen bananas with liquid and any other flavor add-ins (ranging from other frozen fruit to cacao powder). Want to eat your ice cream and get a punch of nutrition too? That's what triggered my favorite nice cream flavor - zucchini bread - to appear from my blender! Not only is this recipe gluten free, vegan and paleo (depending on your toppings), it's also 100% drool-worthy. Just imagine biting into a creamy spoonful of "ice cream" packed with cozy flavors like nutmeg and cinnamon, plus sweet hints from frozen fruit and vanilla...only to know that you're getting a dose of veggies at the same time. As I've written about previously, zucchini is a low in calories and sugar but high in antioxidants, potassium and Vitamin C and B. Research also shows that zucchini (and other summer squash varieties) can boost eye and heart health, help control diabetes, aid digestion and balance the thyroid and adrenal glands. Combined with bananas - which boast high levels of Vitamin B6, manganese, fiber, copper and biotin - this really is the healthiest ice cream you'll ever taste! Not to mention one of the easiest and most delicious desserts for breakfast!
