Banana Fosters Waffles

  • Ingredients: Zemas Gluten-Free Multigrain Pancake & Waffle mix
    1 Banana, smashed
    1 c. milk of choice (almond, rice, coconut, dairy)
    3 T. oil of choice (grapeseed, coconut, olive oil)
    ¼ c. pure maple syrup


  • Instructions: Heat waffle maker according to directions and spray with non-stick spray.  In a bowl mix together the banana, milk, oil and maple syrup.  Fold in Zemas mix.  Once combined ladle mixture into your waffle maker and cook.  Top with caramelized bananas (see below).



    Caramelized Bananas

    2 bananas, sliced

    ¼ c. sugar (palm sugar or sugar of choice)

    3-4 T. butter (diary-free or regular)

    Heat a skillet on medium heat, add in the butter and let it melt.  Add in the sugar and stir together, let it cook to dissolve the sugar and begin caramelizing.  Once the sugar is dissolved fold in the banana slices, and let cook on low heat until mixture is thickened slightly and bananas are softened. Use to top bananas foster pancakes.
