Raspberry-Orange Muffins

Wake up to the sweet aroma of summer with Zemas Gluten-Free Raspberry-Orange Muffins freshly baked and filled with your farmers market picks.

  • Ingredients:


    ½ c. orange juice
    ½ c. milk of choice
    ½ c. oil of choice (grapeseed, olive, coconut)
    2 T. maple syrup or sugar of choice
    1 t. orange extract
    2 eggs (or egg replacer)*
    1 c. fresh raspberries
    ½ c. chocolate chips (optional)
    ½ c. walnuts (optional)

  • Instructions:
    1. Preheat oven to 350 and spray a mini muffin pan with non-stick cooking spray.
    2. In a bowl combine orange juice, milk, oil, sugar, orange extract and eggs. Whisk until well combined.
    3. Fold in Zemas mix, then the raspberries.
    4. If using chocolate chips or walnuts fold these in.
    5. Fill muffin cups ¾ full and bake for 12 minutes.
