Ingredients: 1 3/4 cup of gluten free flour mix (I used King Arthur's new Gluten Free All-Purpose Baking Mix which does contain xanthum gum) 2/3 cup sugar 1 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/2 cup Spectrum shortening 1 cup mashed banana 1Tbsp of EnerG egg replacer mixed with 4Tbsp warm water
