Zemas Cherry Cobbler Waffle Recipe

Cherry Cobbler Waffles Cherry Cobbler Waffles Zemas Madhouse Foods
Enjoy these healthy, ancient whole grain waffles with a sweet twist! Add a scoop of our nutrient-dense cherry cobbler on top of our protein and fiber packed multigrain waffles and your filled for the day!

  • Ingredients:
    Waffle Ingredients:

    1 package Zemas Gluten-Free Multigrain Pancake & Waffle mix
    1 egg (or egg replacer)
    1 1/4 c. milk of choice
    3 T. oil of choice
    1/4 c. pure maple syrup

    Cobbler Topping Ingredients:

    1/4 c. Zemas Gluten-Free Multigrain Pancake & Waffle mix
    ¼ c. gluten-free oats
    3 T. sugar of choice(we use palm sugar)
    1/4 c. raw nuts, crushed fine (almonds & pecans)*
    3 T. unsweetened coconut flakes
    1/8 t. sea salt
    ½ t. baking powder
    3-4 T. coconut oil or butter(dairy free or regular)

    Cherry filling Ingredients:
    1 can cherries, drained and reserve juice
    3 T. sugar of choice
    1 t. starch mixed with 2 t. reserved juice(tapioca, cornstarch, arrowroot)(Starch Slurry)
  • Instructions:  

    Preheat oven to 375 F.
    You will need a 7-8 inch oven proof skillet.

    Waffle Instructions:
    Pre-heat your waffle iron.
    Measure out ¼ cup of the waffle mix into another bowl and set aside for the cobbler topping.
    Mix egg, milk, oil and syrup in a bowl.
    Pour the wet mixture into the remaining waffle mix and whisk until well combined.
    Spray the waffle iron with non-stick spray, and cook waffles following your waffle iron’s directions.
    While they are cooking you can prepare the cherry cobbler topping.

    Cobbler Topping Instructions:
    Combine all cobbler ingredients together except for the coconut oil/butter.
    Cut in the coconut oil/butter with a fork or with your fingertips, until the mixture loosely comes together.
    Set aside.

    Cherry Filling Instructions:
    In a saucepan, combine the cherries and sugar.
    Cook over medium high heat until it begins to bubble.
    Add in the starch slurry, stirring continuously (it will quickly thicken the mixture). Turn off the heat.
    Spray a 7-8 inch cast iron pan (any skillet will work) with non-stick cooking spray. Pour the cherry filling into it, and top with the cobbler topping.
    Bake in the oven for about 20 minutes.
    Top waffles with a scoop of cherry cobbler and enjoy!
