Zemas Gluten-Free Cranberry-Orange Muffins

Start your day with a bite-sized ancient whole grains ready to go. These Cranberry-Orange Muffins will keep you sustained all morning long.

  • Ingredients: 1 pkg. Zemas Gluten-Free Cinnamon-Oatmeal Apple Muffin mix
    ½ c. orange juice
    ½ c. milk of choice(dairy,almond,rice,coconut)
    ½ c. oil of choice(grapeseed, coconut, canola)
    2 T. pure maple
    2 t. orange extract
    2 eggs (or egg replacer)
    ¾ c. fresh cranberries, chopped
    ½ c. walnuts, chopped (optional)
  • Instructions: In a bowl combine orange juice, milk, oil, maple syrup, orange extract and eggs.

    Whisk until well combined.

    Fold in Zemas mix, then add in cranberries. If using walnuts, fold these in.

    Fill muffin cups ¾ full and bake for 12 minutes.

    Bake for 17 minutes. Let cool in pan for 10 minutes, then on baking rack. Great to freeze.
