Vanilla Cream Filled Donut Recipe

Healthy Twinkie-style donuts? Yep, we developed these just for you. Old school recipe with a nutritional facelift. You can have two.

  • Ingredients: Batter:
    1 package Zemas Gluten-Free Multigrain Pancake & Waffle mix
    ½ t. baking powder
    ¼ t. baking soda
    1 t. xanthan gum
    ½ c. butter, melted (regular or dairy free)
    ¼ c. oil of choice
    2 T. pure maple syrup
    ¼ c. sugar of choice
    1 t. pure vanilla extract
    2 eggs (or egg replacer)
    1 c. milk of choice

    Cream Filling:
    ½ c. butter (regular or dairy free), softened
    2 c. powdered sugar
    2 T. milk of choice
    ½ T. pure vanilla extract
  • Instructions: In a mixing bowl, whisk together Zemas mix, baking powder, baking soda and xanthan gum.
    In another bowl, whisk together the milk, butter, oil, vanilla, eggs and sugar.

    Preheat the Twinkie maker.*
    Once heated, spray with non-stick cooking spray and fill about ¾ full with the batter.
    Bake for 8 minutes.
    When done, pop them out and let them cool completely before filling with cream filling (recipe below).

    Cream Filling:
    In an electric mixer, cream the butter until light and fluffy.
    Add in the powdered sugar a cup at a time, mixing between each addition until fully combined.
    Add in the milk one tablespoon at a time.
    Add vanilla.
    Put into a pastry bag fitted with thin circle attachment and fill the donuts either from the bottom(making three different holes across the length) or the sides.
    Dust with powdered sugar. (optional)
