A little taste of paradise right on your table with Zemas Tropical Pineapple Pancakes.
Ingredients:Zemas Gluten-Free Multigrain Pancake & Waffle mix
1 1/2 c. milk of choice (almond, rice, dairy)
1 egg (egg replacer)
3 T. oil of choice (grapeseed, olive, coconut)
¼ c. pure maple syrup
1 t. pure vanilla extract
1 pineapple, sliced into rounds
Instructions:Heat griddle over medium heat and spray with non-stick cooking spray.
Combine all of the wet ingredients in a bowl.
Mix in Zemas pancake mix then ladle about ¼ cup of pancake batter onto the griddle.
Set the pancakes aside while you prepare the pineapple slices.
In a second pan, heat a little oil to brown the pineapple slices on each side (you may only be able to do two at a time) cooking them for about two to four minutes per side.
When all slices are done, enjoy on top off your multigrain pancakes and enjoy!

Substitution ideas:Zemas favorite egg replacer is mixing ¼ c. water with 1 T. of chia seeds. Stir and allow to gel (approx 5 minutes).
