These delicate, surprisingly chocolate-y and crepe-like buckwheat pancakes started out as a challenge to myself - and turned into a family favorite. Equally at home under berries and savories, at our house they run the gambit from Sunday brunch to top-8 and yeast-free lunchbox roll-ups to dinner home run, topped with cinnamon-laced ground turkey.
