Buckwheat Pancakes

These delicate, surprisingly chocolate-y and crepe-like buckwheat pancakes started out as a challenge to myself - and turned into a family favorite. Equally at home under berries and savories, at our house they run the gambit from Sunday brunch to top-8 and yeast-free lunchbox roll-ups to dinner home run, topped with cinnamon-laced ground turkey.   • Ingredients: 6 tbsp Earth Balance soy-free spread, melted
    3/4 cup Rice Dream "original" flavor rice milk
    4 tsp Orgran no-egg
    8 tbsp water
    generous spritz of fresh lemon juice (we recommend meyer lemons if available)
    1/2 cup buckwheat flour
    1/2 cup Bob's Red Mill Gluten-free All Purpose Flour
    1 tsp baking powder
    1 tsp sugar
  • Instructions:
    In a small bowl, whisk together No-egg and water until thoroughly dissolved and frothy.

    Pour into medium-sized mixing bowl and combine with melted Earth Balance, rice milk and lemon juice. Whisk until combined.

    In a separate bowl, whisk together flours, baking powder and sugar until evenly combined. Add to wet ingredients and whisk until smooth and blended. Let stand for 10 minutes to thicken.

    Melt remaining Earth Balance on warm griddle.

    Pour on batter, in roughly 4" rounds. The batter is quite thin so it should create thin, lacey pancakes when the temperature is right (and otherwise may be quite challenging to flip!).

  • Serving suggestions: These pancakes are very versatile - we like them for brunch topped with lox or smoked trout and a dollop of plain yogurt, or just with simple sliced fresh strawberries.  Our older son loves finding them in his lunch box for a top-8 free and yeast free rollup, wrapped around sliced ham and cucumber sticks.  And at dinner time we like to top them with cinnamon-laced ground turkey and lightly-fried apple thins.
