Pumpkin Oat Muffins

Multiple food allergies and treats don't usually go together. Here's a recipe perfect for Thanksgiving that everyone can enjoy. A great dessert, snack and Black Friday breakfast.

  • Ingredients:
    1 cup oat flour (gluten free)
    1/2 cup rice flour
    1/4 cup tapioca starch
    1/3 cup potato starch
    1 Tbs. baking powder
    1/2 tsp. baking soda
    1 1/2 tsp. ground cinnamon
    3/4 cup sugar
    2 Tbs. flax meal
    6 Tbs. lukewarm water
    1/2 cup non dairy milk (coconut, rice milk or flax milk)
    1/2 tsp. apple cider vinegar
  • Serves: 16
