Healthy, Delicious Pancakes Made WIth Pumpkin!

  • Ingredients: 1 c. all-purpose gluten-free flour
    scant 1/2 t. salt
    1/4 t. baking soda
    1/2 t. baking powder
    1 t. cinnamon
    1/2 t. pumpkin pie spice
    1/8 t. xanthan gum
    1/2 t. apple cider vinegar
    1 1/2 t. NuNaturals Vanilla Stevia
    1/2 c. milk (more or less depending on the day)
    1/4 c. pumpkin puree (NOT pumpkin pie mix)
    2 t. coconut oil
    1 egg
    handful of dark chocolate chips (optional)
