Healthy Oatmeal Breakfast Cookies

  • Ingredients: 1 1/2 cups of rolled oats, gluten-free
    2 ripe, mashed bananas
    1 cup of unsweetened applesauce (or pear sauce)
    1/4 cup dried cranberries or raisins
    1/3 cup chocolate chips (I use the Enjoy Life brand which is dairy free)
    1 teaspoon cinnamon
    1/3 cup chopped pecans or almonds
    1 tsp. pure vanilla

  • Instructions: Preheat the oven to 350 degrees. Combine all ingredients in a bowl. Let the mixture stand for about five minutes so the oats can soak up some of the moisture from the fruit. Spoon out teaspoonfuls of batter onto a baking sheet and bake for 30 to 35 minutes. Let cool and store in an airtight container in the refrigerator.
