Gluten Free Pumpkin Quinoa Bars

These gluten free pumpkin quinoa bars are a healthier version of my Pumpkin Cake Bars and my Gingerbread Pumpkin Bars but nonetheless just as delicious.They would make the perfect school snack and would travel well for picnics due to their density.Of course we couldn't resist adding a little dollop of Cream Cheese Frosting to the top.

Cardamom is the world's third most expensive spice and has the unique ability to cool the body when hot, and heat it when cold. For this reason it's long been considered a powerful aphrodisiac and is why, in this season of fertility and rebirth, I like to use it in my Easter cake.

Delicious Gluten Free Pancakes

Nothing starts a weekend morning off better than a stack of hot pancakes! And these will certainly not disappoint. They are thick, fluffy, and delicious! You can add in anything you want to these-- bananas, blueberries, or my personal favorite- chocolate chips! Serve them up with warm maple syrup (or Aunt Jemima’s) and enjoy!

Lemon Pomegranate Scones

Of all the baked goods I miss on my by now ridiculously-restricted diet (low histamine, no gluten, dairy, egg, soy, nuts, safflower oil or most fresh fruits), scones are the worst.  So here it is, perhaps the concoction I'm most proud of: a crumbly, sweet yet tart, freely-edible for me scone!

Swedish-style Allergy-friendly Oatmeal Pancakes

This recipe was inspired by some phenomenal Swedish Oatmeal Pancakes we experienced out in Northern California. We'd brought home a bag of the mix, but before we had a chance to make it we learned that we needed to cut all gluten, dairy, egg and soy out of our family diet.  When I found my wife standing in the garage where we'd exiled all of our banned foods for the trial period of our new diet, I decided to experiment a little. I think these top 8 allergen-free pancakes turned out pretty well. A family favorite and Saturday-morning tradition (well, it was until the baby tested highly allergic to bananas - oh well...).

This is one of our favorite ways to enjoy summer fruits -- super easy to make, power-packed with vitamin C, and works just as well for brunch as for desert.  Oh - and it's totally gluten-, dairy- and egg-free besides, and a lovely way for those with oral food allergy to enjoy fresh berries.  Enjoy!!
