Breakfast. I love it. I really love starting our morning off with a nice, big breakfast. Sunday’s around here are known as Pancake Day. It’s a nice treat to make something more fun and a little more time consuming for a lazy Sunday morning. Once in a while I’ll make waffles to mix it up a bit. One thing I have always wanted to try for my kids is French toast. There’s just something about the thick bread coated in an egg mixture and covered in syrup and powdered sugar that sends my taste buds tingling. But the problem is, my oldest son is allergic to egg and you can’t just take any egg replacer and make French toast out of it. In fact, when I was first learning about egg substitutions and we started using Ener-G, I asked if we could use that in French toast. My wife laughed a little and said “no.” I’ve seen recipes trying to circumvent that such as using a banana mixture, but he’s not that fond of bananas anymore and I wanted something that was going to be more like real French toast. Enter VeganEgg.

This pasta is something we have often on busy weeknights.  It’s incredibly easy to prepare and comes together in just the time it takes for the pasta to cook.  The nutmeg adds a warmth that complements the greens perfectly.  It’s a classic Italian combination.
One of my favorite fall treats has always been my mom's apple crisp. In addition to being delicious, it was easy to change it to dairy free, and then again to wheat free. I miss it a lot during the rest of the year. As sick as I am of oats sometimes, they do come in handy as a cobbler topping and more. Here, I used an adaptation of my mom's apple crisp topping, melded with some not-wheat-free cobbler and jam bar examples (from the Pomona's pectin recipe page) to make a year-round cobbler. This one has a pressed bottom, and a top that is sprinkled but that expands to cover the fruit as it bakes. The coolest part, for me, is that the recipe has become my go-to way of using up leftover jam (you know, the drippy stuff at the bottom of your jars or homemade containers), past-ripe mushed up fruit, etc---whatever is in season. Don't be intimidated by the long directions---they simply lay out every small step for you in case you're new to making grain-and-fruit layered items. Enjoy!
