My kids and I have a variety of allergies ranging up to anaphylactic food reactions and EoE. Recently, my husband (and his sister, states away!) developed a very obvious birch pollen OAS reaction. It's been hard on my husband getting used to avoiding foods, because he never had to when we all did. His OAS extends from apples/cherries/typical fruits to raw almonds, too, so we've started baking them in granola or chex mix...seems to be enough to keep it safe and enjoyable for him.
