Gluten-free Dairy-free Ice-Cream Sandwiches

  • Ingredients: The Pure Pantry Oatmeal Cookie mix
    2 eggs
    1/4 cup earth balance butter
    1 tbs water
    1 tsp vanilla
    4 tbs dairy-free chocolate chips
    So Delicous dairy-free ice-cream
  • Instructions:
    The Cookie mix is super easy to make. Just add the mix to 1/4 cup of earth balance butter, 2 eggs, 1 tbs water, 1 tsp vanilla and 4 tbs of chocolate chips. Simple as that!

    Make sure  your cookies are about the same size so they line up for the sandwiches. You will need to use your hands for these so you will get, “sticky-wicky-lemon-icky” as Charlotte calls it.

    Bake for 10-15 minutes at 350 degrees and let cool for a few minutes before you get out the ice-cream.

    Once the cookies are cool scoop on your favorite dairy-free ice-cream and squish the cookies together. Place in the freezer for 5-10 minutes to let the ice-cream harden up again.

    Enjoy and eat quickly! They melt fast, but they are so delicious! No pun intended :)
