Corn-free, Dairy-free, Gluten-free Candy Corn!

Growing up, I loved candy corn! When I was diagnosed with a severe corn and milk allergy, I had to find a way to enjoy my favorite Halloween treat. Through trial and error, I discovered this yummy recipe. Just because we have food allergies, doesn't mean we have to miss out on Halloween! I hope you enjoy.

  • Ingredients: 2/3 cup light agave nectar
    1 cup granulated sugar (or agave, if you'd like to lower the glycemic index)
    5 Tbsp coconut oil (palm shortening and vegan margarine would also work)
    1 tsp corn-free vanilla extract*
    2 1/2 cups corn-free powdered sugar*
    1/3 cup tapioca starch
    pinch of salt
    corn-free red and yellow food coloring*

    *These corn-free alternatives are easily found in health food stores. If there are no corn allergies in your family, you can substitute with the more common products containing corn.
  • Instructions: Combine powdered sugar, tapioca starch, and salt in a bowl and set aside.

    Mix agave, granulated sugar, coconut oil, and vanilla in a pan. Stir often over high heat. Bring to a boil. Reduce heat to low-medium, continuing to stir for 5 more minutes. Turn stove off.

    Add the dry ingredients into the wet ingredients blending thoroughly with a spoon. This is important, or else you'll end up with hard bits of sugar in the candy corn. Then set aside and let cool for a good 40 minutes. It will be warm, but it can't be hot.

    Remove the dough from the pan onto wax paper. Don't panic. It will seem hard, but it won't be for long. Divide the dough into three more-or-less equal sections. Knead each section in your hand for 2-3 minutes until it has the consistency of Play-Doh. (It really is fun to work with.) Indent one section and add 2 drops red food coloring with 3 yellow. Knead with your hands until the color is nicely blended. (You can wear gloves, but I found the food coloring doesn't stain all that much.) Add in those increments until the desired shade of brightness is reached. Do the same with the next section adding only yellow food coloring. Leave the third section white.

    Take a small section of one color and roll out into a ribbon using your hands. Follow suit with the other two colors. Place yellow on the bottom, orange in the middle, white on top and squish them together. With a rolling pin, gently flatten the ribbons. Then cut out triangles in a zigzag pattern. Some will be yellow on the bottom, some will be white on the bottom. Keep going until all the dough is used up.

    Because it has the consistency of Play-Doh, you can really mold it into any shape as well. :)

    Store in a fridge to keep firm.
