Gluten Free Strawberry-Banana Cheesecake Cups

These, fun, easy bite-sized desserts are perfect for any occasion, especially Holiday celebrations. The light, banana flavor of the cheesecake is perfectly complimented by sweet, strawberry topping. Made with Brothers-All-Natural Strawberry-Banana Fruit Crisps, these cheesecake cups are colorful, tasty, gluten free option for all ages to enjoy!

  • Ingredients:


    2 cups Gluten Free Graham Cracker Crumbs
    2 tablespoons Organic Pure Cane Sugar
    1/2 cup Pure Butter ((Check the label to make sure there are no additives containing gluten))


    5 Package 8 oz Cream Cheese
    1 cup Greek Yogurt
    1/2 cup Pure Butter
    1 1/2 cup Organic Pure Cane Sugar
    1 teaspoon Pure Vanilla Extract
    5 Eggs (plus 2 egg yolks)
    3 bags Brothers-All-Natural Strawberry-Banana Fruit Crisps (Crush the Bananas (Reserve the Strawberry Fruit Crisps for the topping))


    Strawberry Fruit Crisps
    1/4 cup Water
    1 teaspoon Organic Pure Cane Sugar

  • Instructions: Step 1
    Preheat oven to 350 degrees

    Step 2 Crust
    Melt butter and add to mixing bowl along with sugar, graham cracker crumbs, and salt. Mix thoroughly and press into the bottom of paper-lined muffin pan

    Step 3 Filling
    For best results, all ingredients should be at room temperature

    Step 4 Filling 
    In a large mixing bowl, beat the cream cheese and butter until fluffy. Add the sugar, crushed Banana Fruit Crisps, and vanilla; beat until fully incorporated into the cream cheese mixture, scraping the sides of the bowl as needed. Add the eggs and yolks one at a time, beating each until fully combined with mixture. Add the Greek Yogurt and beat until blended, scraping the bowl as needed.

    Step 5 
    Add the filling to prepared muffin cups, filling 2/3 full. Bake for 15 minutes or until batter is almost set. 
    Remove and cool completely, store in a refridgerator for 4 hours

    Step 6 Topping 
    Add the Strawberry Fruit Crisps, sugar, and water to a small saucepan. Bring to a boil, stirring constantly, and simmer for one minute or until it thickens slightly. Spoon mixture on top of Cheesecake Cups and Serve.
