Root beer floats are a summertime favorite at our house. This recipe features a homemade dairy free ice cream and uses root beer kombucha!
Ingredients: 4 cups coconut milk or cashew 2/3 cup coconut sugar 1 tsp vanilla extract 1-2 cups root beer
Instructions: In a mixing bowl, combine milk, sugar and vanilla and stir until sugar is dissolved. Pour into an electric ice cream maker. Make ice cream according to maker instructions. Pour into a sealed container and freeze until solid, about 2 hours.
Place a couple scoops of ice cream in serving glasses and pour root beer over ice cream.

Substitution ideas:If you don't tolerate nuts or coconut, you can use other dairy free milks. You can also substitute brown sugar for the coconut sugar or even use honey.
