1/4 cup shredded coconut unsweetened, shredded
1/4 cup chia seeds organic
3/4 cups coconut milk full fat
1/2 cup coconut water (could substitute with water or other fresh fruit juice)
1 tsp pure vanilla extract
1/4 tsp salt
1/2 cup fresh fruit strawberries, raspberries, blueberries, blackberries, cherries, pineapple, etc.
Mix coconut, chia seeds, coconut milk, coconut water, vanilla, and salt in a small bowl until mixed well.
Place in refrigerator for at least 2 hours to set up. Serve with fresh fruit and enjoy!
