Preheat your oven to 350.
Stir together all ingredients for crust, until combined.
Spread mixture using your hands into a greased 9” pie plate.
Bake for 15 minutes, until golden brown.
Once the crust is cooled - start making your filling.
Combine all filling ingredients in a high-powered blender (we used a Vitamix) or food processor. Blend until light and fluffy.
Pour into the baked crust and freeze for at least 2 hours, until set.
Serve frozen or chilled (depending on consistency) – add a dollop of coconut whip cream and a fresh strawberry to serve.
