The perfect dessert for a get-together with good-for-you ancient whole grains. Easy to make, easy to pack, hassle-free cookie s'mores.
Ingredients:
Zemas Gluten-Free Chocolate Chip Cookie mix 1/8 c. unsweetened applesauce 3 T. oil of choice (grapeseed, olive, coconut) ½ T. pure vanilla extract 1 c. dairy free chocolate chips ¼ c. + 2 T dairy-free milk of choice 1 c. mini-marshmallows
Instructions:
Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick cooking spray.
In a mixing bowl, combine applesauce, oil and vanilla.
Add Zemas cookie mix and whisk until thoroughly combined.
Roll dough into 1 ½ inch balls. Place into muffin cup and then push into the center and up edges of cup, using your fingers.
Bake for 12 minutes.
As cookies are baking, place chocolate chips in a mixing bowl.
Heat milk in a saucepan until just before it boils then pour over chocolate chips.
Let sit for 3 minutes, then mix until smooth
After the 12 minutes bake time, take out the cookies and using the back of a spoon, push puffed up cookie down in the center creating a bowl shape.
Place back in the oven and bake for another 2-3 minutes.
Let the cookie cups cool then loosen them in the pan.
While they are still in the pan, fill with chocolate filling and top with a few mini-marshmallows.
Heat under the broiler for a few minutes, until marshmallows are melted and browned (this happens quick, DO NOT leave them alone).
