  • Ingredients:

    For the mix:
    1 ¼  C quick oats
1 ¼  cup gluten free flour blend (your choice)
    1 tsp baking soda
    ¼  tsp salt
    ¾ C coconut sugar
1 C shredded coconut (sweetened is fine)
3.5 oz semi-sweet chocolate coarsely chopped  (Pasha)

    ¾  C melted coconut oil
1 Tbsp flaxseed meal (ground raw flaxseed)
    2 1/2 Tbsp water
    2 tsp vanilla extract
2 tsp So Delicious Dairy Free Unsweetened Coconutmilk

  • Instructions:
    To assemble the mix:

Combine the flour, baking powder, baking soda and salt. Pour into a 1-quart jar. Level and pack.

One by one, layer over the flour mixture the oats, chocolate chips, coconut sugar and shredded coconut. Seal with lid.

Share the recipe on the top of your jar with a large or small printable label.

    To bake cookies:

Preheat oven to 350 degrees F.

Empty the dry ingredients from the jar into a large bowl and set aside. In a separate bowl, use an electric mixer to beat the melted coconut oil, prepared flax seed mixture (see below), Coconutmilk and vanilla for 2 minutes or until smooth.

Add the dry ingredient mixture to the bowl and combine well.

Drop the dough by large, rounded tablespoons onto an ungreased cookie sheet. Bake for 9-11 minutes or until edges are just brown. Remove from the oven and let the cookies cool on baking sheet for a few minutes before transferring to a rack. Makes 2 dozen cookies.
