Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies Life of a Vegaholic/Valencia Barnes
These cookies are super soft and they have a spongy texture to them that I absolutely love. I’m pretty sure you guys are going to absolutely fall in love with the cookies.

  • Ingredients:
    1 1/2 cups 100% pure pumpkin (see note*)
    1/4 cup coconut sugar
    1 egg 
    1 teaspoon vanilla
    1 teaspoon baking soda
    1 teaspoon coconut milk
    1 teaspoon pumpkin pie spice
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups Bob's Red Mill 100% Stoneground Wheat Flour
    1/2 cups Enjoy Life Mini Chocolate Chips



  • Instructions:
    - Combine oil, pumpkin, sugar, egg, & vanilla in a bowl. 

    - In a separate bowl, combine baking soda & milk. Then, add to the pumpkin mixture. 

    - In another separate bowl, combine cinnamon, baking powder, salt, & flour. Then, add to the pumpkin mixture.


    - Add chocolate chips into the pumpkin mixture and fold in the chips. 

    - Preheat oven to 350 degrees Fahrenheit. 

    - Allow cookie batter to sit for 15 minutes. 

    - Form the cookie batter into balls, flatten the balls (you can use the back of a spoon or the palm of your hand), and place cookies 2 inches apart on a baking sheet. 

    - Bake cookies for 13 minutes. 

    - Enjoy! These cookies taste even better the next day

    * side note: I've tried two brands of canned pumpkin and have found that the consistency of Libby's canned pumpkin is thicker and the flavor is fuller compared to other brands.
