The perfect chocolate cake made for a party! Graduations, summer get-togethers, b-days and more, this sheet cake is a decadent and better-for-you option for your family and friends. Top with fresh farmers market berries.

  • Ingredients: Cake Ingredients:
    1 package Zemas Gluten-Free Cocoa Teff Pancake & Waffle mix
    2 c. palm sugar (or sugar of choice)
    1 c. filtered water
    ½ c. coconut oil (we love organic and unrefined)
    ¼ c. unsweetened cocoa powder
    8 T. butter
    2 eggs
    ½ c. coconut milk
    1 t. pure vanilla extract
    ¾ c. shredded coconut, unsweetened

    Coconut Whipped Cream Ingredients:
    2 cans coconut milk, refrigerated over night*
    3 T. pure maple syrup
    1 t. pure vanilla extract

    ¼ c. shredded coconut, toasted
    2 c. raspberries or strawberries
  • Instructions:
    Cake Directions:

    Preheat oven to 350 degrees and spray a 13x17" pan with non-stick spray.

    In bowl, combine Zemas mix and sugar.

    In a saucepan over medium heat combine water, oil, butter, and cocoa.

    Bring to a boil.

    Pour hot mixture with dry and whisk to combine.

    In a second bowl, whisk eggs, coconut milk and vanilla and then add to mixture.

    Fold in shredded coconut.

    Pour into a sheet pan and bake 17 minutes.

    Cake will continue to bake out of the oven so remove on time.

    Whipped Coconut Cream Topping Directions:

    In the bowl of a mixer fitted with the whip attachment, combine the coconut cream (white part only), maple syrup and vanilla.

    Whip on high speed until light and fluffy.

    Allow the cake to cool completely before topping with whipped cream.

    Top with fresh berries and toasted coconut.

    Note:  Make sure to refridgerate canned coconut milk overnight.
