Zemas Gluten-Free Cherry Tarts

Zemas Cherry Tarts are a great addition to any family dinner or party with friends and using Zemas mix everyone can enjoy them!

  • Ingredients:
    Zemas Gluten-Free Multigrain Pancake & Waffle mix
    1/3 c. palm sugar (sugar of choice)
    8 T. cold butter (dairy-free or regular)
    1 egg or egg replacer (*see below)
    1 t. apple cider vinegar
    2-3 T. ice-cold water
    1 t. cinnamon
    ½ t. xanthan gum

    Cherry Filling:
    3 cups cherries, pitted (you can also use canned cherries, make sure to drain the water)
    1 ½ T. tapioca starch (non-gmo corn starch)
    ¾ c. palm sugar (sugar of choice)
    1 T. lemon juice

    Dairy-Free Whipped Cream:
    1 can coconut milk, refrigerated over night
    3 T. maple syrup
    ½ t. pure vanilla extract
  • Instructions:
    Cherry Pie:
    In a stockpot over medium heat combine all the Cherry Filling ingredients.

    Let the cherries come to a boil until mixture is thickened, about 8-12 minutes, or longer.

    Stay nearby and stir.  Once thickened, set aside and let cool.

    In food processor combine Zemas mix, palm sugar, cinnamon, and xanthan gum, and pulse until combined.

    Add in the butter and pulse until mixture is coarse (about 35 pulses), and there are pea-sized pieces of butter throughout.

    Add in the egg and vinegar; pulse until further combined (about 10 pulses). Slowly add 2 tablespoons of cold water into the mixture and pulse 15 times.  Touch the dough to see if it holds together.  If it does, do not add any more water, if not add the last tablespoon and check again.

    Wrap the dough in plastic wrap and flatten into a disc shape, let firm up in the refrigerator for about 15 minutes.

    Preheat the oven to 375 degrees and spray a mini muffin pan with non-stick cooking spray.

    Once the dough is firm, take a tablespoon of dough and roll it in a ball.  Press the ball into one of the muffin cups, making sure to press up the sides (it helps if your fingers are a little wet).  Do this until the dough is finished.

    Fill the cups with cherry mixture.

    Bake for about 20-25 minutes, or until filling is bubbling and crust is done.

    Let cool for a couple hours, then top with whipped cream, or Zemas favorite dairy-free whipped cream!

    Dairy-Free Whipped Cream:

    Make sure you have refrigerated the coconut milk overnight.

    When you open the coconut milk can, you will see a big chunk of white solid coconut.  Gently scoop that part out into the bowl of a mixer.  Leave the liquid out, you can toss it.  You only want the white part.

    Add in maple syrup and vanilla and using the whip attachment whip the coconut on high speed until light and fluffy.
