Zemas Gluten-Free Texas Sheet Cake

Feed your family or feed a crowd with Zemas Texas Sheet Cake. Allergy friendly and vegan, bring to your next family BBQ or party.

  • Ingredients: Cake:
    Zemas Gluten-Free Cocoa Teff Pancake & Waffle mix
    2 c. palm sugar (sugar of choice)
    1 c. filtered water
    ½ c. oil of choice (grapeseed, olive, coconut)
    ¼ c. unsweetened cocoa powder
    8 T. butter (dairy-free or regular)
    2 eggs or egg replacer
    ½ c. buttermilk (dairy-free or regular)
    1 t. pure vanilla extract

    Chocolate Icing:
    3 oz unsweetened chocolate (dairy-free or regular)
    3 T. unsalted butter (dairy-free or regular)
    ¼ c. milk of choice (almond, coconut, dairy)
    1 t. pure vanilla extract
    2 c. powdered palm sugar (powdered sugar)
  • Instructions:  
    Preheat oven to 350 degrees and spray a 13x17" pan with non-stick spray. Any larger sized cookie sheet with a raised edge will work.

    In bowl combine Zemas mix and sugar.

    In a saucepan over medium heat combine water, oil, butter, and cocoa. Bring to a boil.

    Pour hot mixture with dry and whisk to combine.

    In a second bowl whisk eggs, buttermilk and vanilla, then add to mixture.

    Pour into a sheet pan and bake 17 minutes, will continue to bake out of the oven so remove on time.

    While cake is cooking prepare the frosting. In a double boiler over medium heat combine chocolate and butter.

    Remove from heat and add vanilla and milk, whisking to combine.

    Finally whisk in sugar of choice and let rest.

    Allow the cake to cool completely before adding frosting.
