Zemas Gluten-Free Red, White & Blue Mini Cheesecake Recipe

Red, White and Blue Cheesecakes Red, White and Blue Cheesecakes Zemas Madhouse Foods
A fun and delicious way to celebrate the 4th of July! Nutritious, creamy and dairy-free cashew-based mini cheesecakes on top of our easy to make crust made using our Zemas Mini Chocolate Chip Cookies will be a party favorite.

  • Ingredients:    

    Cheesecake Crust:

    1 ½ c. Mini Chocolate Chip Cookies
    3 T. butter, melted (dairy-free or regular if dairy free isn't needed)



    Cheesecake Filling:

    1 ½ c. raw cashews, soaked overnight (discard water before use)
    Juice from 1 large lemon
    1/3 c. coconut oil, melted
    ½ c. + 2 T. full fat coconut milk, canned
    ½ c. pure maple syrup
    ½ c. fresh blueberries (optional)
    ½ c. fresh raspberries (optional)

  • Instructions:     

    Cheesecake Crust:

    Crush the cookies in a food processor until finely ground, set aside in a bowl.

    Pour the melted butter into the crumbs and use your fingers to mix together until butter is dispersed throughout.

    Line each muffin cups with two 1/2" x 4" strips of parchment paper criss-crossed, creating little handles(this will make it easier to remove the cheesecakes from the pan).

    Put about 1-2 tablespoons of crust mixture into each muffin cup and pat down with fingers.

    Freeze for about 10 minutes.

    Cheesecake Filling:

    Combine all the ingredients together in a blender and puree until smooth.

    Remove muffin pan from freezer and pour cheesecake mixture into the muffin cups, filling to the top.

    Freeze for atleast 4 hours to set-up.

    Garnish with fresh berries and serve.
