Zemas Gluten-Free French Silk Pie Recipe

Decadence, chocolate and nutritious? Yes, and filled with healthy ancient whole grains, superseeds, omega's, vitamins and minerals. No one will ever know it's dairy-free or gluten-free.

  • Ingredients:    

    Cookie Crust:
    1 box Mini Double Chocolate Cookies, crushed fine (a food processor works well)
    3-4 T butter (dairy free), melted

    Pie Filling:
    10 oz. dark chocolate chips
    1 can coconut milk, chilled overnight in refrigerator
    2 T. pure maple syrup
    ½ t. pure vanilla extract
    1 ripe avocado

    Coconut Whipped Topping:
    1 can coconut milk, chilled overnight
    3 T. pure maple syrup
    ½ t. pure vanilla extract
  • Instructions:    

    Pie Crust:

    Crush the cookies in a food processor until they’re finely ground.

    Place the cookie crumbs into a pie pan.

    Pour melted butter into the cookie crumbs and blend together using your fingers.

    Press the crumbs into the pan and up the sides.

    Refrigerate for at least an hour.


    Pie Filling:

    Pour the chocolate chips into a medium-size saucepan.

    Scoop the solidified coconut cream from the can, placing it into the sauce pan.

    Add 1/3 cup of the coconut milk liquid.

    Reserve the remaining liquid in the can.

    Warm the saucepan over low to medium heat until the chocolate has melted.

    Add the maple syrup and the vanilla extract-whisk until smooth.

    If the chocolate seems too thick add more of the reserved liquid from the coconut milk.

    Set aside to cool.

    Using a food processor or a blender on high, add the avocado flesh along with the cooled chocolate mixture and blend until smooth.

    Pour filling into pie crust and place back in the refrigerator to set-up for an hour.


    Whipped Coconut Cream:

    Scoop out the solidified parts of the chilled coconut milk and place into a chilled bowl for beating. Beat on high with a hand mixer until smooth.

    Add the vanilla extract and maple syrup and beat again.

    After filling has chilled, spread the whipped cream on top of the pie and garnish with chocolate shavings.
