Zemas Gluten Free Pecan Pie Cookie Cups

Love Pecan Pie? These adorable Mini-Pecan Pie Cookie Cups get a nutritious facelift with our ancient whole grains and superseed crust! Vegan and non-vegan versions available.

  • Ingredients:     

    Cups:
    1 package Zemas Gluten-Free Chocolate Chip Cookie mix
    2 T. unsweetened applesauce
    4 T. oil of choice
    ½ T. pure vanilla extract

    Non-Vegan Filling:
    1 c. pecans, chopped
    ½ c. pure maple syrup
    2 eggs
    ¼ c. sugar of choice
    ½ T. vanilla

    Vegan Filling: (see below)

  • Instructions:     
    Preheat oven to 350 degrees and spray mini-muffin pans generously with non-stick cooking spray.
    In a stand up mixer with paddle attachment combine applesauce, oil and vanilla.
    Add in Zemas mix and combine thoroughly.
    Roll dough into 1 ½ inch balls.
    Place into muffin cups and, using your fingers, push dough into the center and up edges of the cup.
    Set aside and make filling.

    For non-vegan filling:
    Combine maple syrup, eggs, sugar and vanilla.
    Whisk until well combined.
    Fold in chopped pecans.
    Distribute filling among the cookie cups, filling them to the top.
    Bake for 17 minutes, the filling will puff up a bit.
    Remove them from pan while still slightly warm. (If they are difficult to remove, pop them into a warm oven to heat up for a couple of minutes, then remove them.)

    For vegan version:
    In a saucepan, combine sugar, maple syrup and water.
    Cook mixture over medium heat until sugar is dissolved and mixture begins to bubble.
    Pour in the starch slurry mixture (water and starch mixed together).
    Allow mixture to bubble stirring constantly until it thickens.
    Once thickened, remove from heat and add in vanilla and pecans.
    Distribute filling into cookie cups up to the top.
    Bake for 17 minutes.
    Remove them from pan while still slightly warm.
