What’s better than chocolate chip cookies? Why, doubling the chocolate, of course!

  • Ingredients:

    • 1 cup butter, softened
    • 3/4 cup sugar
    • 3/4 cup packed brown sugar
    • 1 tsp vanilla extract
    • 1 Tbsp Ener-G Egg Replacer
    • 4 Tbsp water
    • 2 cups flour
    • 1/2 cup cocoa powder
    • 1 tsp baking soda
    • 1 tsp salt
    • 2 cups chocolate chips
  • Instructions:

    1. In a small bowl or mug, combine the Ener-G Egg Replacer with 4 Tbsp water. Beat briskly with a fork or whisk until fully combined and foamy.
    2. In a large mixer bowl combine butter, sugar, brown sugar, vanilla, and Egg Replacer concoction. Beat until creamy.
    3. Add the baking soda, salt, and cocoa powder and beat until incorporated.
    4. Gradually add the flour until fully mixed together.
    5. Stir in chocolate chips.
    6. Scoop out balls of roughly 1 Tbsp of batter and place them 2 inches apart on cookie sheet.
    7. Bake at 375 degrees: 8 minutes for chewy cookies, 9 1/2 minutes for crunchy cookies.
