A favorite family treat here in the Madhouse, now made with a better-for-you dairy-free condensed milk. Using our ancient whole grain Mini Double Chocolate Cookies for the crust, these bars will keep everyone smiling.

  • Ingredients: 3 c. Mini Double Chocolate Cookies
    4 T. coconut oil, melted
    2 cans coconut condensed milk (each can is about 7 oz. -we use Let’s Do Organic brand)
    1 egg (egg replacer)
    1 ½ c. dark chocolate chips
    1 ¼ c. raw pecans, crushed
    1 ½ c. unsweetened shredded coconut
  • Instructions: Preheat oven to 350 degrees F.

    Line 9x13 brownie pan with parchment paper.

    Crush the cookies in a food processor until they are fine crumbs.

    Pour them into the prepared pan.

    Pour the melted coconut oil over them.

    Using your fingertips, mix the oil into the crumbs until evenly distributed.

    Pat the crumbs evenly into the prepared pan.

    Bake crust for 3-5 minutes.

    Take out and let cool while you make the filling.

    In a bowl, combine the condensed milk, egg, chocolate chips, pecans, and coconut-mix well.

    Pour into prepared crust and bake for 25 minutes.

    Let cool before cutting.
