Warm Banana-Rum Coconut Milk Ice Cream Sundae

Eager for a quick-and-easy, yet top-8 allergens free dessert, we stumbled into the perfect accompaniment to vanilla coconut milk ice cream.  Rather than fight the inevitable 'coconut-ness', we rolled it into a warmly comforting, tropics-meets-cozy treat.

  • Ingredients:

     

    1/2 tsp Earth Balance Soy-Free margarine spread

    1 banana, mashed

    2 Tbsp dark rum

    1/4 tsp cinnamon

  • Instructions:

     

    Heat margarine in small skillet.

    Add mashed banana, rum and cinnamon, stirring to combine.  Saute, stirring constantly, until browned and lightly caramellized.

    Serve warm over bowls of ice cream.
