2 cups King Arthur Gluten-free flour
Preheat oven to 350F. Grease a cake pan with olive oil (Elmo-shaped or other).
Combine flour, baking powder, brown sugar, and salt.
Separately, whisk together egg replacer and water in a small bowl, then whisk in rice milk. Add apple sauce, maple syrup and whisk until thoroughly combined. Add dry ingredients and stir to combine thoroughly.
Bake ~45 minutes, until golden brown and pulling away from the edges of the pan.
