These bars are free of gluten, milk, eggs, and peanuts, and can very easily be made free of other allergens as well. They're a quick and simple way to enjoy the deliciousness of apple pie in a neat little bar!
Ingredients: Base:
1 cup gluten-free all purpose flour
1/3 cup white rice flour
2 Tbsp sugar
1 tsp salt
1/2 cup milk-free butter spread/substitute, softened (I used Smart Balance Lite)
Filling:
4 apples, cored, peeled and roughly chopped (I slice and freeze apples when we don't eat them quickly enough and thaw for recipes like this, so mine were not peeled)
5 Tbsp granulated sugar
1/4 tsp cinnamon
2 tsp tapioca starch (or cornstarch)
2 Tbsp lemon juice
1/4 cup fruit preserves (I used strawberry because I had it on hand)
Line an 8x8 glass baking dish with foil, then grease the foil.
In a medium bowl, mix together the base ingredients. When adding the butter, cut it in until it forms a breadcrumb-like consistency. Pour into the pan and press down evenly.
Bake about 10 minutes, or until base begins to turn slightly golden brown. Remove and increase oven temperature to 400 degrees.
While the base is still hot, spread fruit preserves in a thin layer. Pour apple mixture over it.
In a small bowl, combine the topping ingredients until crumbly. Sprinkle over the top. (I added a little brown sugar to the top as well, which is optional.)
Return to the oven and bake 25-30 minutes or until the crumble begins to turn golden brown. Allow to cool slightly and use foil to lift from dish. Cut into bars and serve.
