Zemas GF/DF Halloween Spiderweb Cake

Ancient Grain gluten-free cake great for any Halloween party (or change the design to a snowflake for the holidays).

  • Ingredients: 1 cup Zemas Cocoa Teff Pancake & Waffle mix
    1 egg plus 1 egg white (or egg replacer)
    3/4 c. palm sugar
    1/2 c. Almond Milk (or milk of choice)
    1/4 c. unsweetened Applesauce
    1/4 c. Grapeseed Oil (Coconut Oil)
    1 t. pure Vanilla
    1 1/2 t. Instant Expresso Powder
    1 oz. unsweetened DF Baking Cocoa Bar

    Dairy Free Cream Cheese Web (adapted from Simply Sugar and Gluten Free Blog)
    3 oz. dairy free Cream Cheese, soften at room temp.
    1 egg yolk
    1 T. Sorghum Flour (or Brown Rice flour)
    1 T. Pure Maple Syrup
    1/2 t. pure Vanilla




  • Instructions: In a microwave safe dish, cook cocoa bar for 15 seconds.  Stir and cook another 15 seconds, repeat until totally melted.  In another bowl, combine Zemas mix with sugar and expresso powder.  Set aside.
    In a stand mixer fitted with a paddle attachment, mix oil and melted cocoa bar.  Add in eggs and beat on medium speed until ight and fluffy,  Add in applesauce, milk, and vanilla.  Mix until smooth.  Add in dry mixture and mix until just combined.
    Pour into greased 8" cake pan and set aside.

    In stand mixer, beat all frosting ingredients until smooth.  Place frosting into a pipping bag with a round tip.  If you don't have a pipping bag use a ziploc baggy and cut the corner.  In the middle of the cake place a large dot of cream cheese (about the size of a quarter).  Put 3 circles around the dot, creating a bulls-eye appearance.  Take a butter knife and starting with the center dot, drag the knife to the outer edge.  Lift knife & wipe clean, then repeat 8 times around the circle.

    Bake for 23-28 minutes at 350 degrees
