Gluten Free and Corn Lite Pecan Pie - Made with Honey with a Dairy Free Crust

This pie isn’t nearly as cloyingly sweet as the traditional one made with corn syrup but it still has the great texture and flavor of the corny one.  Let’s get to pie making huh?

  • Ingredients:

    For the Filling:

    1/2 Cup Brown Sugar
    1/2 Cup White Sugar
    1 1/2 Cups Honey
    1 Tsp. Vanilla extract
    1 Tsp. Non-Iodized Salt
    4 Large Eggs
    1 1/2 Cups Coarsely Chopped Pecans

    For the Crust:

    1 Stick Frozen Butter
    1/2 Cup Potato Starch
    1 Cup White Rice Flour
    1/2 Cup Brown Rice Flour
    2 Tsp. Guar Gum
    1 Tsp. Non-Iodized Salt
    2 Tbls. Sugar
    1 Tsp. Apple Cider Vinegar
