Bob's Red Mill Gluten-free Pie Crust Mix
1 1/4 cups shortening
6-8 Tbsp ice water
8 medium apples
1/2 cup sugar
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1 Tbsp almond or soy milk
1 Tbsp sugar for sprinkling
Make pie crust according to the package directions (using mix, shortening, and ice water).
Peel, core, and slice the apples. Sprinkle with sugar, cinnamon, nutmeg, and salt.
Roll one pie crust and place in bottom of pie plate. Add apple mixture. Place second pie crust on top.
Pinch edges of pie crust together. Brush top with almond or soy milk and sprinkle with sugar.
Back at 425 for 25 minutes. Reduce temperature to 375 and bake for another 30-35 minutes.
Cook for at least 1 hour before serving.
