1/2 c buckwheat groats
1 1/2 c rolled oats (gluten-free)
3/4 c Don't Go Nuts Chocolate Soy Butter
1/2 c shredded coconut
1/2 c honey
2 T ground flax seed
2 t vanilla
1/2 t salt
1. Toast the buckwheat groats in a saucepan over medium heat for 5-7 minutes, stirring constantly, until they are darker brown.
2. Mix the toasted buckwheat and the rest of the ingredients in a medium bowl until thoroughly incorporated.
3. Scoop out dough into 1.5" balls and place on parchment paper to harden. Enjoy!
