This recipe is a combination of my favourite childhood memories at holiday time: cherries, ice cream and chocolate. But this time it had to be dairy-free.
Ingredients:
200 g fresh cherries 2 tbsp (40ml) honey ¼ tsp ground cinnamon 270 ml can of coconut milk (I use Ayam coconut milk because it is pure and has no thickeners) 20 g dairy-free dark chocolate (I used 70% cocoa Lindt dark chocolate) To serve: extra cherries and dark chocolate

Substitution ideas:If you don't like chocolate, you could just leave it out altogether and the ice cream will still taste fantastic. If you don't have fresh cherries, you should be able to use frozen cherries.
