Ingredients:8 Tbsp unsalted butter, room temperature 1/2 cup fine sugar 1/4 tsp salt 1/4 tsp baking powder 1/4 tsp dried thyme leaves, crushed between your fingers the zest of half a lemon 1 egg 3/4 cup gluten free cornmeal 3/4 cup gluten free flour blend (I used Namaste Foods Perfect Flour Blend)
