Ingredients:Zemas Gluten-Free Cocoa Teff Pancake & Waffle mix 8 Tbsp dairy-free butter (butter) 1 cup palm sugar 2 lg. eggs (egg replacer*) ¼ cup cocoa powder 4 Tbsp golden rum (replace with almond milk for an alcohol-free version) 1 tsp. pure vanilla extract ¾ tsp xanthan gum ½ tsp baking powder ½ cup coffee (regular or decalf) 3 Tbsp almond milk (or other milk of choice) 2 Tbsp instant espresso powder (instant coffee)
Instructions:Preheat oven to 350 degrees and line a muffin pan with cupcake liners.
In a bowl combine Cocoa Teff Pancake mix, xanthan gum, and baking powder; set aside.
In a standing mixer fitted with the paddle attachment, beat the butter at medium speed until smooth, about 2 minutes. Increase the speed to medium-high and slowly add the sugar. Continue beating until light and smooth, about 2 minutes. Turn the mixer off and scrape down the sides of the bowl with a rubber spatula. Add the cocoa powder, vanilla and golden rum; beat at medium speed for 1 minute more (scraping down the sides of the bowl, if needed). With the mixer running at medium-low speed, add the eggs, one at a time. Scrape down the sides of the bowl.
In a saucepan over medium-high heat combine the coffee, instant espresso powder and almond milk and bring just to a boil. Remove from the heat.
In the stand mixer, add half the dry mixture and mix until just combined. Slowly add half of the liquid, and mix on low speed. Add in the rest of the dry mixture and once it is just combinedpour in the rest of the liquid; you may want to mix this part by hand or have the mixer on low. It will look soupy, don’t worry. Fill cupcake liners ¾ full. Bake for about 15 minutes, or until a toothpick inserted comes out clean. Cool and frost with coffee buttercream icing (below).

Substitution ideas:Zemas favorite egg replacer is mixing ¼ cup water with 1 Tbsp of chia seeds. Stir and allow to gel (approx 5 minutes).
