Nut-Free Chocolate SunButter Eggs

Nut-free variation of this favorite candy for spring/Easter!

  • Ingredients: 1/2 cup SunButter (we used Creamy)
    1/3 - 1/2 cup powdered sugar
    1/2 teaspoon vanilla
    1/2 cup nut-free chocolate chips
    2 teaspoons coconut oil
  • Instructions:

    Blend together SunButter, powdered sugar and vanilla, adjusting the powdered sugar to achieve a stiff dough. Pinch off about 1 Tablespoon dough at a time and roll into egg shapes. Set on a baking sheet lined with wax or parchment paper. In a microwaveable bowl, heat the chocolate chips and coconut oil in 30 second intervals, stirring after each 30 seconds until melted together. Stir to combine and dip the SunButter eggs in the chocolate, then return to the lined baking sheet. Refrigerate until set.
