A rich, meaty Bolognese sauce using beets in place of tomatoes.

  • Ingredients: 4 stips bacon, cut into 1” strips
    1 lb. grass fed ground beef
    1 sweet onion, chopped
    2 carrots, chopped
    1 stalk celery, chopped
    2 roasted beets, chopped fine
    1 large zucchini, chopped
    1 cup sliced mushrooms
    5 cloves garlic, crushed
    1 cup fresh basil, chopped
    3 cups organic chicken broth
    1 bay leaf
    1 tbsp. dried oregano
    1 tsp. apple cider vinegar
    1 tbsp. balsamic vinegar
    1 tbsp. Coconut Aminos
    salt, to taste

  • Instructions: Brown bacon in large enameled cast iron pot, over medium heat. 

    Once bacon is browned, add ground beef and brown. 

    Add onions, carrots, and celery.  Wilt vegetables. Add beets, zucchini, mushrooms, and garlic.  Stir.  Place lid on pot and smother vegetables for 30 minutes.

    After 30 minutes, remove lid and add remainder of ingredients.  Continue to cook, without lid, for another 30 minutes.  Sauce will thicken.  If you prefer a thinner sauce, add more chicken broth.
