Quesadillas are a favorite at our house - they are simple, quick and versatile! These Sweet Potato Quesadillas are great for vegans too!
Ingredients: 1 purple (or regular) sweet potato, baked or steamed 1 cup broccoli, steamed 1 cup carrots, steamed 1 avocado, diced 1 tsp sea salt 1 tsp cilantro, finely chopped 1/2 tsp black pepper 1/2 tsp garlic powder 8 Must B Nutty Tortilla shells (or other shells)
Instructions: In a large bowl, mash together potato, carrots, broccoli and avocado until blended. Add in salt, cilantro, pepper and garlic powder. Stir until combined.
On a griddle or large skillet over medium heat, place tortilla shells. Cook on each side for about 3-5 minutes until slightly crispy. Spoon vegetable mixture over 4 shells and top with remaining shells. Serve with some salsa, sour cream, etc.
